When ready to cook, start the Traeger grill according to grill instructions. Set the temperature to 400 degrees F and preheat, lid closed, for 10 to 15 minutes.
Whisk together flour, baking powder, salt and baking soda. Cut in butter using two knives (or pulse in a food processor) until butter pieces are the size of peas.
And buttermilk and mix until just combined. Dump biscuit dough onto a lightly floured surface and roll out to 1-1/2-inch thickness.
Using a biscuit cutter, cut out biscuit shapes and place on a parchment-lined baking sheet. Brush the tops of biscuits with egg wash and place baking sheet directly on the grill grate. Bake until tops are golden brown, 10-15 minutes.
Place country ham directly on the grill grate next to biscuits and grill until lightly browned and slightly crisp. Top each with a slice of cheese and cook until cheese is melted.
Remove from grill and keep warm.
In a medium nonstick pan, cook eggs to desired doneness.
To build the sandwiches slice biscuits in half, place a slice of ham and cheese on bottom half, top with egg, then top with the other half of biscuit. Enjoy!
