Grilled Pear and Gorgonzola Flatbread

This flatbread is the perfect amount of sweet and savory. Grilled, sweet wood-fired pears, onions and sharp gorgonzola is baked and topped with peppery arugula, drizzled with sweet honey and dusted with smoked salt.

Ingredients

  • 1 STORE-BOUGHT PIZZA DOUGH
  • semolina flour
  • 1 tbsp EXTRA VIRGIN OLIVE OIL
  • 1/4 cup THINLY SLICED RED ONION
  • 6 oz CRUMBLED GORGONZOLA
  • 1 FIRM BUT RIPE PEAR, THINLY SLICED
  • 1 STORE-BOUGHT PIZZA DOUGH
  • semolina flour
  • 1 tbsp EXTRA VIRGIN OLIVE OIL
  • 1/4 cup THINLY SLICED RED ONION
  • 6 oz CRUMBLED GORGONZOLA

Preparation

When ready to cook, start the Traeger grill on smoke with the lid open until fire is established (4-5 minutes). Set the temperature to 450 degrees F and preheat, lid closed 10-15 minutes.

Roll out pizza dough onto a floured surface to desired thickness and transfer to a pizza peel or upside down sheet tray dusted with semolina flour.

Brush the pizza dough with olive oil and top with onion, gorgonzola and pears.

Slide the pizza off the peel directly onto the grill grate and cook for 10 minutes. Remove from the grill and top with arugula, pinch of smoked salt, and a drizzle of honey. Enjoy!
